Roasted Winter Vegetables

  • coconut oil
  • 4 carrots
  • 2 beets, peeled
  • 2 potatoes
  • 2 yams or sweet potatoes
  • 1 leek or onion
  • 1 small squash
  • 1 head of garlic

1)Preheat oven to 375ºF.
2)Cut all the veggies up in 1-2 inch chunks. If squash is too hard to cut, try warming it in a microwave or pre-roasting slightly in the oven until you can cut it.
3)Lay chunks on a large baking sheet, lightly greased with oil. Peel the cloves of garlic and leave them whole.
4)Drizzle everything with oil and roast in the oven for about 20 minutes. Turn them and continue roasting until desired tenderness is reached.
