Artichoke Soup

  • 1 tbsp. coconut oil
  • 0.5lb artichoke
  • 2 medium yams
  • parsley
  • 1 large onion
  • 4 cups of water
  • salt to taste
  • pepper to taste
  • 1/4 tsp nutmeg

1)Finely chop one large onion and fry gently in a large saucepan until soft.
2)Add about 1 1/2 lbs. of artichokes and yams, diced.
3)Fry gently, stirring for another few minutes.
4)Add water and spices, bring to a boil, cover, and simmer for about 20 minutes - till the vegetables are very soft.
5)Blend the soup with a food processor or hand blender.
6)Serve hot with a sprinkling of parsley in each bowl.
