Yam Burgers

Ingredients:
- 1 cup Oatmeal, fine
- 4 medium Yams, steamed
- 1-2 tsp Black Pepper
- 3-4 Green Onions
- 2 tsp Dill, dried; or 3 tsp fresh
- 1 tsp Sea Salt
- 1 pinch Cayenne

Directions:
1)Scrub the yams well and rinse. Trim off any ends, and any blemished areas. Leave the peel on for fibre and texture. Cut yams into one inch thick sections, and steam until tender. (Approx. 16-18 minutes)
2)Place the steamed yams into a medium size mixing bowl and mash with a fork. You will need to use a small, sharp knife to cut the peel into smaller pieces. Continue mashing until yams are an evenly thick, chunky consistency.
3)Chop the green onions finely and add to the bowl, along with the oatmeal, dill, black pepper, sea salt and cayenne. Mix well, and let sit for ten minutes before forming into patties. This allows time for the oatmeal to absorb some of the moisture from the yams, and will help make the burgers stick together.
4)Form into 4 large, or 6 small size patties, and bake or fry on both sides until golden.
5)Enjoy fresh and hot, on a whole grain kaiser or burger bun, with all the fixings!
