Sweet and Sour Beet Soup

Ingredients:
- 1/2 tsp salt
- 3 cups Water, filtered
- 1 bunch Beets, trimmed
- 8-10 med Raisins, golden or black
- 2 med Apples, cored & peeled
- 1-2 Tbsp. Apple Cider vinegar

Directions:
1)Trim leaves and stems from beets, and scrub well.
2)Pour 3 cups water into vegetable steamer, and bring to a low boil.
3)Cut beets into bite size chunks, transfer into steaming basket, and steam for 10 minutes. Add the apple pieces, and steam for another 5-6 minutes, until both beets and apples are tender.
4)Pour 2 cups of the steaming water into a blender or food processor, add salt, and blend.
5)Add the tender beets, apple pulp and raisins, then puree until smooth, (about 3-4 minutes).
6)Pour this liquid into a soup pot, add the remaining one cup of steaming water, and let simmer on low for 5 minutes.
7)Just before serving, stir in apple cider vinegar.
