A Cauliflower Named Curry

Ingredients:
- 2 tsp Coconut oil
- 1 cup Coconut Milk
- 1 medium Yellow Onion, chopped
- 1 cup Spinach, chopped, firm packed
- 2 Tbsp. Curry Paste; mild, med, or hot
- 1/4 cup Green Onions, chopped
- 1 med Cauliflower, chopped

Directions:
1)Preheat oven to 350 degrees.
2)In a frying pan, heat the coconut oil over medium-high heat.
3)Add the chopped onions, and sauté for 6-7 minutes, until they begin to brown. Mix in the curry paste until all onions are evenly coated. Add the chopped cauliflower, and mix well again. Lower heat to medium, cover pan with lid, and let cook for 5 minutes.
4)Uncover the pan, add the coconut milk and mix well, then let simmer for five more minutes, allowing some of the moisture to evaporate.
5)Place the chopped spinach into the bottom of an 8X8, or 9X9 casserole dish, then pour the coconut mixture over top and stir gently. Garnish with chopped green onions.
6)Place casserole dish into a preheated oven, and bake for 20-25 minutes, until top is golden brown.
7)Serve hot, over top steamed brown basmati, or jasmine rice.
