Wild Rice Stuffing - Holiday Dinner

Ingredients:
- 1 cup Wild Rice
- 1 Tbsp coconut oil
- 2 cups Water
- 1 cup Onions (diced)
- 2 cups Chard (chopped)

Directions:
1)Pour the rice into a small saucepan, adding the water and bring to a boil over high heat. Once water boils, lower heat to lowest setting and let rice simmer for 45 minutes.
2)Meanwhile, melt the coconut oil in a frying pan placed over medium heat.
3)Add the onions and sauté until golden. Add the chopped chard, cover pan with lid and remove from heat. Let sit covered for 2-3 minutes, just long enough to wilt the chard.
4)Once rice is finished cooking, remove from heat and let pot stand for 10 minutes before removing lid. In a mixing bowl, combine the hot, cooked rice, onion and chard.
5)Toss gently and thoroughly.
