Char-Grilled Prawns with Lime and Chili

  • 16 prawns - shell on
  • splash of coconut oil
  • 2 red peppers, finely chopped
  • handful of flat leaf parsley
  • juice of 2 limes
  • 1 red onion, finely chopped
  • sea salt

1)Using a small, sharp knife, split the prawns dorsally top to tail. But keep the tail intact. Combine the ingredients and lavish over prawns. Marinate in the fridge for 4 hours.
2)Oil and heat the grill. Cook prawns for 2 min either side. Remove from grill, add a further squeeze of lime, a sprinkling of sea salt and sprinkle some finely chopped parsley over the top.
