Spicy Noodle Soup

This is a great base for a noodle soup meal - ie the best meal. Top the noodles and broth with whatever you like, and prepare to be satisfied.

Ingredients:
  • 1 tbsp coconut oil
  • 1-2 cloves minced garlic
  • 1 tbsp of minced fresh ginger
  • 1/2 cup miso paste
  • 1/4 cup soy sauce
  • 1/2 tsp chili powder
  • 2-3 cups broth
  • Noodles
  • 1 cup water

Directions:

1) Heat stock in a large pot.

2) Heat cooking oil and sauté minced garlic and finely chopped ginger in a pan over medium heat until fragrant (about 5 minutes).

3) Add miso paste, soy sauce, and chili powder to the pan and stir until the mixture is smooth. Add water to loosen it up

4) Add this mixture to your heated soup stock and stir until it is mixed. Add noodles to the broth and cook until noodles are tender. Serve into bowls and top as desired.
