Organic Banana Walnut Muffins

Ingredients:
  • 1/4 cup coconut oil
  • 1 cup maple syrup
  • 1/3 cup chopped walnuts
  • 1 cup almond milk
  • 1/4 cup unsweetened applesauce
  • 2 large ripe bananas
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1/3 cup shredded coconut
  • 1 tbsp apple cider vinegar

Directions:

Preheat oven to 375ºF and grease muffin pan with coconut oil.

1) In a mixer: combine applesauce, coconut oil, and maple syrup. Once completely mixed, beat in ripe bananas and walnuts

2) Combine flour, baking powder and baking soda.

3) Stir in almond milk and apple cider vinegar, alternating with flour mixture, into the banana mixture, until just moistened.

4) Then stir in vanilla.

**The secret to beautiful muffins is to not over mix!**

Pour batter into muffin cups, fill about 3/4 full. Sprinkle with coconut. Bake until golden (23-25 min). Cool on a rack before removing from muffin pan.

Freeze extra muffins—they make a great work snack when you’re rushing out the door.
