Quinoa with Mango Curried Yogurt

Ingredients:
- 1 tbsp fresh lime juice
- 2 tbsp coconut oil
- 1/2 c almonds, chopped
- 1/3 c plain yogurt
- 2 tsp curry powder
- 1 tsp ginger, finely grated
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1 1/3 c quinoa
- 2 c mango, peel/pit/cut into 1/2” chunks
- 1 red bell pepper cut into 1/4” pieces
- 1/3 c chopped fresh mint

Directions:
1)Rinse quinoa using 5 changes of water, rub grains and let them settle before pouring off water
2)Cook quinoa in a 4 – 5 quarts of boiling salted water for 10 min. Drain in a sieve and rinse under cold running water.
3)Set sieve over a saucepan containing 1 1/2 inches boiling water (sieve should not touch water) and steam, covered with a kitchen towel and lid, until fluffy and dry, 10 - 12 min. Toss quinoa with curried yogurt and remaining ingredients.
4)Serve warm or at room temperature.
