Apple & Rhubarb Crisp

  • Topping:
  • 3/4 cup all purpose flour
  • 3/4 cup brown sugar
  • 1/2 cup oats
  • 1/2 tsp ground cinnamon
  • 6 tbsp unsalted butter, room temp or Earth Balance Buttery Spread
  • 1/2 cup finely chopped walnuts
  • Filling:
  • 4 cups Golden Delicious apples, peel, core, cut into 1/2” pieces
  • 3 cups rhubarb, cut into 1/2-inch pieces
  • 3 tbsp sugar
  • 2 tsp all purpose flour
  • Vanilla ice cream or frozen yogurt
  • 1/4 tsp ground cloves
  • 1/2 tsp vanilla extract

Topping: Mix first 5 ingredients in bowl. Rub in butter until mixture begins to clump together. Mix in nuts.

Filling: Preheat oven to 400°F. Combine apples, rhubarb, sugar, flour and vanilla in large bowl and toss to coat. Transfer mixture to 8x8x2” baking dish. Sprinkle topping over fruit.

Bake until fruit is tender when pierced with knife and topping is crisp, about 45 min. Cover with foil if topping is browning too quickly. Cool 20 minutes. Serve warm with vanilla ice cream.
