Ingredients:
  • 6 tbsp fresh lemon juice
  • Dash allspice
  • 6 very ripe peaches
  • 1/4 tsp cinnamon
  • Dash nutmeg
  • honey to taste

Directions:

1)Peel, pit and slice the peaches. Place them in a medium-sized heavy saucepan. Add the lemon juice and spices. Heat to a boil, lower the heat to a simmer, and cook uncovered for 8 - 10 min. Remove from heat, and let cool to room temperature.
2)Taste and add honey as desired.
3)Transfer to a jar with a tight-fitting lid, and store in the refrigerator. This will keep for about a week.
