Watercress Soup

  • 2 Tbsp coconut oil
  • 2 medium yams, diced
  • ground pepper
  • 1/2 cup leek, chopped
  • 3 bunches watercress, stalks removed
  • 1 litre (1 3/4 pints) chicken stock
  • salt
  • 1 lime, grated rind and juice

1)In a pan melt oil and add yams and leeks, cook gently for 10 min (until soft).
2)Finely chop the watercress. Add the stock to the pan and bring to boil, add a pinch of salt. Add the watercress and simmer for 8 min.
3)Transfer to a food processor or blender and puree until smooth.
4)Return the soup to the pan. Add the lime rind and juice, check the seasoning and heat through.
