Adzuki Miso Soup

  • 2 tsp coconut oil
  • 4 c veggie broth
  • 3 c cooked adzuki beans
  • 3 med carrots, cut in thin diagonally slices
  • 1/4 c miso
  • 4 leeks, slices thin

1)Bring Adzuki beans to the boil and simmer approx 30 mins (until soft) and drain.
2)Boil broth, add beans and simmer, stirring occasionally (15 min).
3)Heat oil on medium high and stir-fry carrots (3 min). Stir carrots into soup.
4)In a bowl combine miso and 1/2 cup hot broth, stir into soup.
5)Bring soup to a boil, stirring occasionally, and stir in leeks and pepper to taste.
