Ingredients:
- 4 medium sized yams - sliced
- 1 large onion - sliced
- 2 carrots - sliced
- 1 green pepper - sliced
- 1 zucchini - sliced
- mushrooms - sliced
- broccoli - chopped
- Sauce:
- 2 1/2 cups tomato sauce
- 1/4 cup tamari, low-sodium
- 1 tsp thyme - ground
- 1 tsp dry mustard
- 1 tsp basil
- 2 tsp Chili powder
- 1/2 tsp cinnamon
- 1/8 tsp sage
- 2 Tbsp parsley flakes

Directions:
1)Preheat oven to 400F
2)Wash and slice veggies about 1 inch thick.
3)Layer vegetables in a large casserole dish, starting with yams on the bottom, onions on top, then carrots, then zucchini, green peppers, mushrooms and broccoli.
4)In a separate bowl mix together ingredients for sauce and pour over vegetables.
5)Cover casserole dish, and cook for 45-60minutes. The yams should be easy to pierce with a fork when done.
