Ingredients:
- Crust:
- 1 cup fine bulghar
- ¼ cup cocoa
- 1 cup cane sugar
- 2 cups water
- pinch salt
- 1 teaspoon vanilla
- ½ cup millet
- 2 cups water
- ¼ teaspoon salt
- 1/3 cup unsalted cashews
- 1/3 cup honey
- 3 kumquats
- 1 cup kumquats
- ½ cup apple juice
- 1 teaspoon cornstarch
- Honey to taste

Directions:
Crust: Simmer, until tender, all ingredients, adding vanilla when cool. Press into 9” pie
pan. Sprinkle with walnuts.
Filling: Simmer water, millet and salt until soft, puree with remaining ingredients. Pour
onto crust.
Topping: Thicken apple juice with cornstarch, add sliced kumquats and bring to boil. Spread over filling. Chill.
