Spinach Salad

Ingredients:
  • 2 tangerines
  • ¼ cup olive oil
  • 4 cups spinach leaves, washed and dried
  • 16 – 20 rambutans, peeled and seeded
  • ¼ cup toasted almond slices
  • 1 cup cottage cheese
  • 1 lemon, zest and juice
  • 2 tablespoons honey

Directions:

1)Line 4 plates with spinach leaves and put ½ cup cottage cheese on each. Arrange rambutan and tangerine segments around the plate.
2)Mix together dressing ingredients and drizzle over salad.
3)Top with almond slices.
