Delicious Zucchini Tomato Loaf

Ingredients:
  • 2 tbsp coconut oil
  • 2 Zucchini, grated
  • 1 small onion, grated
  • 1 clove garlic, diced
  • 2 eggs
  • 1/3 cup flour
  • 2 tomatoes, cored and roughly chopped
  • 1 tsp ground paprika
  • 1 tsp baking powder
  • 1/4 tsp salt

Directions:

1)Preheat the oven to 180°C
2)Place the zucchini in a bowl with the onion and garlic and mix well.
3)In a small bowl, mix together the paprika, eggs and oil with a whisk or hand-held blender. Season and stir in the flour, salt and baking powder to make a smooth, thick batter. Mix the batter into the grated zucchini mixture.
4)Heat a 20cm non-stick ovenproof frying pan over a medium heat with a drizzle of oil. Add the zucchini mixture, top with the chopped tomatoes and cook for 5-6 minutes, then transfer to the oven and bake for about 1 hour or until golden and just firm to the touch.
5)Remove from the oven, carefully ease the cake out of the pan and serve hot or warm.
