Lettuce and Radish Salad

  • 4 tsp. Apple-cider vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tbsp. Olive oil
  • 1 bunch red leaf lettuce
  • 1 cup radishes, cut into julienne strips
  • 1/3 cup pine nuts, toasted lightly

1)Wash and dry the lettuce leaves, save 8 whole leaves and shred the rest. Cut up the radishes and toast the pine nuts
2)Mix together the vinegar, salt, pepper, and oil in a large bowl. Use a whisk to ensure that the dressing emulsifies. Add a teaspoon of mustard for extra zip.
3)Add the shredded lettuce, radish and pine nuts and toss it well.
4)Put two pieces of whole lettuce leaves on each of 4 plates and then add the 1/4 of the salad mixture on top.
