  • 2/3 cup canned pumpkin
  • 1/2 cup chopped walnuts
  • 1/4 cup oil
  • 2 organic eggs
  • 1 cup brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

Mix dry ingredients.

Beat eggs, add sugar, then oil; add dry ingredients with pumpkin and nuts.

Pour in 9x9x2-inch greased baking pan.

Bake at 350 degrees for 30 minutes. Cool 5 minutes.

Remove from pan and serve with warm apple cider.
