Autumn Vegetable Soup

Ingredients:
- 1 yam, chopped
- 2 tbsp coconut oil
- 2 tbsp fresh chives, chopped
- 1 litre vegetable stock (1.8 pints, 4.2 cups)
- 1/2 pumpkin, cubed
- 1 carrot, sliced
- 2 leeks
- 1 onion, chopped
- 4 cloves garlic (minced)

Directions:
1)Heat the coconut oil in a saucepan and sauté the pumpkin, carrot, leeks, onion and yam for 3-4 minutes.
2)Add the garlic and fry for another 2 minutes.
3)Add the stock, bring to the boil and simmer for 30 minutes or until vegetables are tender. Season to taste.
4)Transfer to a blender or food processor and process until smooth. Serve with freshly chopped chives.
