Chocolate Dipped Poached Pears

  • 4 md pears, about 1 lb (slightly under-ripe is best)
  • 5 cups water
  • 2 1/2 cups granulated sugar
  • 4 (1-by-3-inch) strips lemon zest
  • 1/2 tsp vanilla extract
  • 2 1/2 oz semisweet chocolate chips or bars
  • 1 oz butter, melted
  • Cake, pastries or brownies
  • Whipping Cream

Bring water, sugar, lemon and vanilla to a boil and stir until sugar is dissolved then reduce heat by half.

Peel the pears, leaving the stems intact.

Reduce heat once more so the syrup is barely simmering. Add the pears and cook until tender, about 7 minutes. Remove from heat.

Allow pears to cool completely in the syrup.

Chocolate dip
Combine the melted butter and chocolate in a double boiler and stir until melted. Keep warm.

Once pears are cool, remove from syrup.
Cut pears in half and carefully scoop out core. Slice pear halves nearly to the stem, fan out wedges.
Carefully dip the stem end of the pears into the chocolate. Refrigerate the pear to allow the chocolate to cool.
Place a piece of cake, brownie, or pastries (or any combination thereof) on a plate or shallow bowl. Add whipping cream to top, place pear half on whipping cream.

Add three espresso beans to syrup when adding the pears for a bit of zip
Before halving pears, dip the top half in a glass of port and let sit for 2 minutes. Continue the recipe as normal, or only dip the bottom half in the chocolate for a different look.
