Good Ol' Irish Boxty

  • 4 medium russet potatoes, peeled
  • 1 cup plain flour
  • 1 1/8 cups buttermilk
  • 2 tbsp butter
  • 6 strips of bacon
  • 1 tsp baking soda
  • salt

1) Boil the potatoes for 15 minutes. Mash half of them and grate the other half into a colander to drain, pressing out water if needed.

2) Cook that bacon.

3) Mix grated and mashed potatoes together with the flour, baking soda, and plenty of salt. Stir in buttermilk to make a batter.

4) Heat the butter in a pan at medium to medium-high heat. Drop in spoonfuls of the batter (any sized) and cook for 2 minutes until golden underneath then flip and cook until golden again. Garnish pancakes with bacon.
