Strawberry Chicken Club Sandwich

Ingredients:
  • 2 tbsp fresh lemon juice
  • 1 ½ lbs skinless, boneless chicken breast halves
  • 1 avocado, halved and pitted
  • Whole Wheat Bread
  • spinach
  • 1 ½ cups sliced strawberries

Directions:

1)Season chicken with salt and pepper and cook on both sides until golden. Let it cool for 5 minutes and thinly slice.
2)Using a food processor, puree the avocado with lemon juice. Transfer to bowl and season with salt and pepper.
3)Spread avocado mixture on toast slice and stack with chicken.
4)Then stack spinach and strawberries
