Veggie Kabobs

Ingredients:
- 2 Tbsp cup coconut oil
- 1 cup cherry tomatoes
- metal/wooden skewers
- 2 tsp. mustard
- 1/4 cup balsamic vinegar
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 2 onions
- 1 yellow pepper
- 1 red pepper
- 1 green pepper
- 1 lb mushrooms
- 1 zucchini
- 1 pkg extra firm tofu

Directions:
1)In a small bowl, mix the mustard, vinegar, oil, soy sauce and garlic together. Transfer sauce to a long, shallow pan.
2)Cut peppers, onions, zucchini and tofu into bite-size pieces. Stick assorted veggies and tofu onto skewers, about 8 pieces of veggies and tofu per skewer.
3)Place the skewers in the shallow pan and use a spoon to pour the marinade over the veggies. Do this a number of times until the veggies and tofu have marinated well.
4)Heat BBQ to medium high heat. Place the skewers on the bbq and grill to taste.
