Mediterranean Lover's Scramble

  • 4 eggs
  • 1/4 cup crumbled feta cheese
  • Salt to taste
  • 1/4 cup chopped onion
  • 1 medium tomato, diced
  • 8-10 Kalamata olives - chopped
  • 1/8 cup fresh basil, chopped
  • 1/3 tsp oregano
  • Pepper to taste

1) Beat the eggs together lightly and add a small sprinkling of salt and pepper and half the oregano.
2) In a nonstick pan, saute onions until they begin to turn transparent, then add tomato and olives until the onion begins to brown. Remove from pan and set aside.
3) In the same pan, scramble the eggs until half cooked. Dump the onion mixture, feta and herbs and mix together just as eggs are finished cooking.
4) Makes 2 servings. One for you, and one for your love.
