Summer Spinach Salad

  • 4-6 cups baby spinach, washed and dried
  • 2 peaches, sliced into bite sized pieces
  • 1 red pepper, sliced
  • 10-15 mushrooms, thinly sliced
  • 2/3 cup goat cheese
  • 1/3 cup red onions, thinly sliced
  • 1 cup pecans
  • 1/2 cup sesame seeds
  • olive oil
  • Balsamic Vinegar

1)Wash and shake dry the spinach and other vegetables. Slice and chop ingredients to size.
2)Create your salad sculpture, starting with the spinach and sesame seeds and ending with the goat cheese. Drizzle lightly with balsamic vinaigrette.
