Classic Shepherd's Pie

Ingredients:
  • 1 tablespoon coconut oil
  • 1 large yellow onion, peeled and chopped
  • 1 large carrot, peeled and chopped
  • 1 pound ground organic beef
  • 1 cup broth
  • 1 tablespoon tomato paste
  • 1 teaspoon chopped fresh or dried rosemary
  • 1 tablespoon chopped parsley
  • 1 cup peas
  • 2 medium yams, cut into chunks
  • 1/2 cup coconut milk
  • Kosher salt to taste
  • Fresh ground pepper to taste
  • 1/2 head of garlic, peeled

Directions:

1)Steam yams and several garlic cloves with a little salt and pepper to taste. When done, mash with coconut oil and milk. Mash and put aside.
2)In a large saucepan, brown onion with remaining garlic (crushed or minced) in oil over medium to medium-high heat. When onions are transparent, add beef and brown.
3)Once beef is browned, add carrots, broth, rosemary and tomato paste.
4)When liquid is suitably reduced and thickened (proper thickening is the cook's opinion) remove from heat, add peas and parsley, season with salt and pepper and transfer to casserole bowl.
5)Top with mashed yams and bake at 375 degrees until yams are lightly browned.
