Custardy Bread and Butter Pudding

Ingredients:
  • 4tsp tsp(18 mL) butter, softened
  • 4 slices of day old bread, crusts removed
  • 1-1/2 cups (375 mL) milk
  • 1/4 cup (50 mL) granulated sugar
  • 1 tsp (5 mL) vanilla
  • pinch nutmeg
  • Optional extras: Raisins, chopped dried Apricots, Choc chips, mixed nuts
  • 2 eggs

Directions:

This traditional British dessert is usually made with stale bread and raisins, and is perfect for a cold winter's night.
Feel free to mix it up with optional extra ingredients you have at hand, such as nuts, chocolate chips or dried chopped fruit.

Grease two 2-cup (500 mL) baking dishes; set aside.

Butter bread; cut into 3/4-inch (2 cm) cubes. In bowl, whisk milk, sugar, eggs, vanilla and nutmeg; add bread and any of the optional extras, and toss to coat. Divide between the two prepared dishes.

Sprinkle 1tsp (5 mL) granulated sugar over the top and bake in 350°F (180°C) oven until knife inserted in the center comes out clean, approx 45 minutes.
