Apple Basmati Pilaf

Ingredients:
- 1/2 onion, minced
- 1 tablespoon coconut oil
- 1 1/2 cups basmati rice
- 3 3/4 cups vegetable broth
- 2 bay leaves
- Pepper to taste
- 2 cups apples, cored and diced
- 2 tablespoons parsley, chopped

Directions:
1)Sauté onion in oil in non-stick skillet until tender; stir in rice and brown slightly.
2)Stir in broth, bay leaves and pepper; bring to a boil. Cover tightly and reduce heat; simmer for 45 minutes.
3)Remove from heat; stir in apples and parsley and cranberries. Serve warm or cold.
