Flame Grilled Pineapple

Ingredients:
- 1 pineapple, peeled, cored and sliced into thick rounds
- 3-4 tbsp coconut oil
- 1-2 tbsp ground black pepper

Directions:
1)Heat BBQ to maximum
2)Brush or lightly drizzle coconut oil on one side of pineapple and sprinkle or grind some black pepper on top. Place, oil side down, on hot grill.
3)Let the pineapple sit for 5 minutes before brushing the top side lightly with oil, adding pepper and turning. Flames are good; you want the grill marks to be dark, but you do not want the whole side charred. Please note that cooking times will vary.
