Tomato Olive Couscous Salad

Ingredients:
- 1 cup uncooked couscous
- 1 cup diced tomatoes
- 1 cup olives, pitted and diced
- 1/2 cucumber, diced
- 1 tbsp chopped fresh basil
- 2 tbsp chopped green onions
- 2 crushed garlic cloves
- 2 tbsp balsamic vinegar
- 4 tbsp extra virgin olive oil
- Salt
- Black Pepper

Directions:
1)Cook couscous, rinse in cold water and drain. Set aside.
2)Mix vegetables and herbs with spices, vinegar and olive oil until nicely coated. Taste and adjust seasonings if necessary. Add the couscous and mix again.
