Barbecued Balsamic Beets

Ingredients:
- 3 large beets, peeled and sliced into 1/2 inch thick circles
- 1/3 cup balsamic vinegar (and a wee bit more for garnish)
- 1 clove garlic, minced
- 2.5 tbsp rosemary
- 1/4 tsp nutmeg
- 1/4 tsp paprika

Directions:
1)Mix all ingredients - except beets - together in a wide dish that is large enough to hold the beets, too.
2)Place beets in liquid, and coat well. Allow to sit for at least 30 minutes - 1 hour or more is better.
3)Heat Barbecue to Medium High. Remove beets from marinade, reserving marinade for basting while cooking the beets.
4)Lightly oil grill just before placing beets on it. Cook the beets for 8-10 minutes, until grill marked, then flip and cook another 8 minutes, until tender. Baste regularly with marinade, especially upon turning.
5)Drizzle with any leftover baste before serving, adding a dash or balsamic vinegar for garnish.
