Sunflower Sprout Salad

  • 2 cups spring mix salad greens
  • 1 cup sprouts
  • 2 large carrots, grated
  • 2 green onions, chopped
  • 1 small acorn squash, cut into matchsticks
  • 1 lemon
  • 1 tbsp olive oil
  • sunflower seeds

1)Rinse spouts under cool water, and allow to dry on a dish cloth.
2)Rinse and peel carrots, and grate using a cheese grater. Set aside.
3)Rinse green onion under cool water, pat dry, and chop into bite size pieces.
4)Chop summer squash into matchstick size pieces.
5)Toss all ingredients together, drizzle with freshly squeezed lemon and olive oil.
