Ingredients:
- 4 Slices of Bread
- 1 sliced Heirloom Tomato
- 1 handful of Microgreen Arugula
- Sliced Organic Nostrala Cheese (or similar)
- 4 slices prosciutto or 6 of bacon (optional)
- 1 block of Smoked Tofu, sliced
- Medium Spicy Mustard
- Fig and Balsamic Spread

What are microgreens? Well, they're not sprouts and they're not baby greens - they're somewhere in between! Currently becoming a great trend because of their distinct - but not overpowering - flavour and the amount of nutrients packed into each bite.
