Balsamic Fig Spread

Ingredients:
- 4 dried figs, soaked and drained
- 1/4 cup raw cashews
- 1/4 cup Balsamic Vinegar
- 2 tbsp olive oil
- 1 small garlic clove
- small pinch rock salt
- an ample helping of fresh ground black pepper to taste
- water to thin

Directions:
1)Soak the figs for about 8 hours, then drain.
2)To make the dressing, start the cashews and garlic in a blender then slowly add the oil. Add the figs, then the vinegar and salt.
3)Blend until smooth, very slowly adding water if necessary. The consistency should be something like hummus. Just before finishing, grind a couple good turns of black pepper in.
