Meyer Lemon Aioli

Ingredients:
- juice of 1 meyer lemon
- 1/2 teaspoon finely grated Meyer lemon peel
- 1 egg yolk
- 1/2 cup (4 oz) extra virgin olive oil
- salt to taste
- fresh ground pepper to taste (a generous grind or two)

Directions:
1)Vigorously whisk egg yolk and lemon juice in a large bowl, while very, very slowly adding - drizzling - olive oil until mixture is consistency of light mayonnaise. (If necessary, thin with more lemon juice).
2)Once desired consistency has been reached, season with salt and fresh ground pepper.
