Meyer Lemon Aioli

  • juice of 1 meyer lemon
  • 1/2 teaspoon finely grated Meyer lemon peel
  • 1 egg yolk
  • 1/2 cup (4 oz) extra virgin olive oil
  • salt to taste
  • fresh ground pepper to taste (a generous grind or two)

1)Vigorously whisk egg yolk and lemon juice in a large bowl, while very, very slowly adding - drizzling - olive oil until mixture is consistency of light mayonnaise. (If necessary, thin with more lemon juice).
2)Once desired consistency has been reached, season with salt and fresh ground pepper.
