Farmer's Goat Cheese Avocado Dip

Ingredients:
  • 1 large avocado
  • 4 oz soft chevre
  • Juice of one lemon, plus zest from 1/4 of the lemon
  • 3 cloves fresh garlic, sliced
  • 1/4 cup fresh cilantro (or parsley/cilantro mix)
  • 1/2 tsp salt
  • 1 sweet pepper, slices in thirds, seeds and white removed
  • 1 tbsp coconut oil

Directions:

1)Prepare oven or grill for roasting peppers by heating broiler or grill to 375 degrees.
2)Put all items except red peppers and 2 cloves of garlic in a blender and blend until smooth. Transfer to serving dish.
3)Rub peppers and garlic lightly with oil. Place pepper, flattened with skin side up, on tray and 2 cloves garlic with them.
4)Remove skin from garlic and peppers. Blend peppers and garlic until smooth, with a little salt to taste. Arrange on top of avocado dip.
