Chocolate Chip Walnut Spelt Cookies

There are a few secret ingredients in the baking world, things that will help bring a delicious item to perfection. In chocolate cakes, it's a little coffee. In cookies... Maple Syrup. It really adds a depth of flavor and keeps cookies wonderfully moist and gooey. On that note, the small amount of molasses in this could be left out, or replaced by a bit more maple syrup.

Ingredients:
- 1 cup spelt flour
- 1/4 cup cane sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon molasses
- 1/3 cup chocolate chips
- 1/3 cup chopped walnuts

Directions:
This recipe makes 12 cookies.
- Preheat oven to 350 degrees.
- In one large bowl, mix all the dry ingredients (except chocolate chips & walnuts) together. In a separate bowl, mix the wet ingredients.
- Combine wet to dry ingredients and mix until just combined. Lightly stir in chocolate chips and walnuts.
- Place spoonfuls of batter on cooking trays and bake for 10-12 minutes.
