Creamed Spinach

Ingredients:
- 2 cups washed & cooked spinach (approx 2lbs fresh)
- 2 garlic cloves, crushed (or 2 tbsp prepared)
- 3 tbsp coconut oil
- 3/4 cup coconut milk
- 1 tsp paprika
- 1 tsp nutmeg

Directions:
1)Stir the milk, paprika and nutmeg in the saucepan and cook, still over medium-high heat, stirring constantly for about 5 minutes to allow the milk to reduce a bit. Remove from heat and let cool it a bit.
2)Place spinach in food processor and slowly add the milk, pureeing until completely smooth. Sometimes a little more milk is needed for consistency.
3)Add the pureed spinach. Stir so that it mixes evenly and keep stirring until warm.
4)Season with a little salt and lots of fresh ground pepper.
