Maple Glazed Salmon

Ingredients:
- 4 salmon fillets
- 2 tbsp coconut oil
- 1 tbsp molasses (optional, more syrup can be used)
- 2 tbsp maple syrup
- Juice from 1 lemon
- Zest from 1/2 lemon
- Fresh ground black pepper
- Pinch of kosher salt
- Top with:
- 1 tbsp fresh basil

Directions:
Preheat the oven to 500 F. Rinse and dry fish.
Grease your baking pan with 1 tbsp coconut oil and spoon the remaining oil equally over the salmon.
Mix 1 tbsp maple syrup with 1/2 of the lemon juice, a bit of black pepper and molasses (if using only maple syrup, add a second tbsp). Spread equally over salmon.
Dust liberally with salt and pepper. Place the fish in the oven, and roast for about 8-10 minutes, until the top is nicely browned and the inside is barely done.
Meanwhile, put the remaining lemon juice and zest into a small cup and mix with the last of the maple syrup. Spoon the sauce over the cooked fish, sprinkle with basil, and serve hot.
