Grilled Portabella Cream Cheese Bagel

Ingredients:
  • 2 portabella mushroom caps
  • 1 Tbsp coconut oil
  • 2 cloves of garlic, crushed
  • 1 Tbsp cream cheese
  • 2/3 cup baby arugula
  • 1/2 red pepper, sliced
  • Fresh Ground Pepper to taste
  • Bagels
  • Balsamic Vinegar

Directions:

1)Preheat grill to 400 degrees, or medium high heat.
2)Baste mushroom caps in coconut oil, starting with a light coating on the smooth top side, followed by a drizzle over the bottom. 3)Spread garlic over top then drizzle with balsamic vinegar and finish with ground pepper.
4)Cook on grill until soft, about 5 minutes on each side.
5)Toast bagels, spread cream cheese over top of both halves, followed by sliced peppers and arugula on one half. Place the grilled mushroom on the other half, season generously with black pepper and enjoy!
