Caesar's Tuna Melt

  • 2-4 slices bread
  • 1 can tuna
  • 4 tbsp Caesar dressing
  • 2 tbsp (slightly heaping) diced onion (any type, including green)
  • 1 tsp fresh ground black pepper
  • 2-3 thin slices (shavings) of fennel bulb core per slice of bread
  • 3-4 slices of red pepper per slice of bread
  • 1/4 cup parmesan, grated or shaved
  • grated or sliced cheese to cover bread

Drain tuna and place in bowl. Add onions, ground pepper and Caesar dressing. Mix well.

Preheat oven to broil. Lightly toast one side of the bread; broil the fennel while the bread is in there.

Spread tuna mixture over untoasted side of bread. Top with peppers and fennel, then cover with main cheese and sprinkle with Parmesan. Place on baking tray or dish and cook (with the oven door slightly open) until cheese is bubbly and melted.

Serve with a side salad or chips.
