Berry Compote with a Twist

Ingredients:
- 1 lb berries
- 1 cup peeled and diced peaches
- 4 tbsp sugar
- 3 tbsp coconut oil
- Juice from 1/2 lemon
- 1 tsp lemon zest (rind)
- Pulp from 1/2 vanilla bean

Directions:
1)Heat the oil, sugar, lemon juice and vanilla in a large saucepan at medium-low (about 1/4 heat) until oil has melted. Add 1/2 of the berries and tree fruit and simmer for 10 minutes. Do not let it bubble too much.
2)Remove from heat and add remaining fruit. Serve over breakfast or desserts.
