Classic Rice Pudding

Ingredients:
- 4 cups milk
- 4 cups water
- 1/2 cup butter (plus a little more to taste)
- 1/8 tsp salt (approx)
- 2/3 cup sugar (or more if desired)
- 1 1/4 cups long grain white rice
- 2 eggs, beaten
- 1/2 tsp vanilla
- Raisins, if desired

Directions:
Bring milk, water, butter, salt and sugar to a boil in a large pot. Add rice, stir to blend, and cook uncovered for 45 minutes, stirring occasionally (more often near the end). Remove from heat.
Mix beaten eggs in measuring cup with vanilla and enough water to make 1 cup of liquid. Add to rice, along with any raisins or other ingredients you might fancy.
Return ingredients to a boil, stirring constantly, then remove from heat and pour mixture into large baking pan or casserole dish to let set.
