Italian-esque Stuffed Chicken Breasts

Ingredients:
  • 4 chicken breasts, thawed
  • 1/2 cup mozzarella
  • 1/4 cup diced onion
  • 1/4 cup mushrooms, diced
  • 1/4 cup diced tomato
  • 2 cloves of garlic, crushed and finely diced
  • 1 heaping tsp fresh oregano
  • 4 basil leaves
  • 2 tbsp coconut oil

Directions:

1)Warm 2 tbsp coconut oil in a saucepan on medium-high heat (about 60-70%). When shimmering, add onions and garlic followed by mushrooms. Season with a pinch of salt and some fresh ground pepper and stir often.
2)When onions are beginning to go transparent, add tomatoes and oregano. Cook until tomatoes soften, about 3-5 minutes. Remove from heat.
3)Cut open chicken breasts, and begin to stuff by inserting cheese first, then vegetable mix.
4)Bake in oven at 350 degrees for 25-30 minutes.
5)Pan fry on medium high for 8-10 min on thicker side, about 5 on thinner.
