How to Properly Cook Quinoa

Ingredients:
- 3 cups Quinoa
- 6 cups water, plus 2 cups more
- 2 pots
- 1 fine mesh strainer

Directions:
Preparing the quinoa is slightly complex, but it is easily done in large batches because cooked quinoa can easily be frozen for a couple of months.
Wash the quinoa 3 times under cold water, making sure it is very well rinsed.
Quinoa is cooked in twice as much water as grain (6 cups of water in this case). Bring water and quinoa to a boil, then reduce heat to low and cooked covered for 18 minutes. But it doesn't stop there.
Before the quinoa is done, bring a small amount of water to a boil in another pot. Strain the quinoa from the first pot into a fine mesh strainer, then place strainer (and quinoa) over the second pot to steam it for another 5-10 minutes, making sure the water doesn't touch the strainer, until it is done to your liking. Remove from heat and fluff with a fork.
