Orange Ginger Carrots

Ingredients:
  • 4 cups carrots, cut into bite sized pieces (about 1 lb)
  • 2 tbsp coconut oil
  • 1/2 tsp orange zest
  • 2 cm ginger, peeled and grated
  • 1/3 cup fresh orange juice
  • pepper to taste
  • salt to taste

Directions:

1)Cook carrots until almost done - in water (with or without broth) for 7 minutes, or steam for 5 minutes.
2)Melt 2 tbsp oil in pan over medium heat. Add carrots and cook, stirring occasionally, until they begin to brown. Add ginger and orange zest, cook for 2 minutes more.
3)Add orange juice to pan. Stir and cook uncovered until juice has thickened to a syrup, about 7 more minutes. Taste and season with salt and pepper.
