Ginger Energy Bites

Ingredients:
- 1/4 cup apricots
- 1/2 cup hemp hearts
- 1/2 cup almonds
- 3 tbsp coconut oil
- 1 tbsp vanilla extract
- 1 tsp cinnamon
- 2 tbsp fresh ginger
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/4 tsp salt

Directions:
Your sweet solution to that afternoon crash! These will keep for up to 2 months in the freezer, if they last! I suggest making a couple batches at a time.
Soak the apricots in boiling hot water for 5 minutes prior to blending. Simply add all the ingredients into your blender or food processor, and mix together.
Roll into balls at any size you like! It's fun to have variety. If the paste becomes gooey and is too hard to roll, just let the mix sit in a bowl in the refrigerator and try 10 minutes later.
I created these treats when I was thinking about ginger cookies over the holidays.
