Potato Pancakes

Ingredients:
  • 2 lb. potatoes
  • 1 medium yam
  • 1 zucchini
  • 1 medium onion
  • 1/4 cup flour
  • 1 tsp. salt
  • ground pepper
  • Coconut oil
  • Apple Sauce
  • 3 eggs

Directions:

1)Peel and grate potatoes, yam, zucchini, and onion.
2)Transfer this mixture to a colander and press out moisture.
3)Transfer to a bowl and add flour, salt, eggs and pepper to taste; mix until well-blended. Let stand 5 minutes, then pour out any excess liquid.
4)In a large heavy skillet, heat 2 tbsp oil over med-high heat.
5)Spoon 1/4 cup of mixture onto skillet, then spread into 3-inch cakes. Fry until crisp and golden, about 3-5 min. each side.
6)Keep the cooked pancakes warm in the oven. Serve with applesauce
